Had a risotto with ramps and fresh sweet Italian pork sausage (from a recent Bon Appetit actually) the other day---worked well with a big Cali Zinfandel

Also my better half created a great dish of soft shell crabs with ramps and lemon butter with which we tried 2 whites, both of which worked well:
a 2007 Morlet Family Vineyards Bordeaux-style Semillon/SB Blend and the 2007 Tablas Creek "Esprit de Beaucastel" which is mostly Roussanne

so - I'd love to try this- can you tell me how you prepare the ramps and potatoes, and what cheese you pair with it?

Ps. likely with either caves de bordy cotes de jura bl, or the l'etoile- perhaps the cuvee sacha from puffeney?

Gil, When it comes down to it, anything that can push back, the TC would have been quite good with that crab. Good thinking.

And I don't think the Sacha would have enough structure. But, let me know if you go in that direction.
