Pascaline and I drank the Vouette et Sorbe Extra Brut Fidle one evening at a bare bones, natural wine bar (Les Crieurs de Vin) in the medieval city of Troyes. Its got the apple cider-tell of natural wine making, and might give drinkers expecting neutral fizz a fright.
Producer is Bertrand Gautherot, who makes wine in the Aube, a part of the appellation long disregarded and derided, but home to two other fantastic producers, Lassaigne and Fleury.
